Tequilera Los Alambiques
In the highlands of Jalisco, where red volcanic soil meets century-old agave cultivation traditions, Tequilera Los Alambiques has quietly established itself as the producer behind Tequila Ocho, one of Mexico's most respected single estate expressions. This distillery represents a bridge between old-world craftsmanship and modern precision, built on more than 100 years of family knowledge in agave cultivation and distillation.
History & Heritage
Tequilera Los Alambiques operates from Arandas, in the highlands of Jalisco, a region prized for its mineral-rich volcanic soil and elevation that produces some of Mexico's finest agaves. The distillery was established to continue a family tradition spanning over a century, becoming the production home for Tequila Ocho and Tequila Curado. The facility maintains deep roots in traditional methods while embracing innovations that honor the agave plant.
The Spirits
The distillery produces 100% additive-free tequilas using overripe agaves slow-roasted in stone ovens for 48 hours, followed by a 24-hour cooling period. Fermentation occurs naturally in wooden oyamel vats without commercial yeasts, allowing wild yeasts to develop the flavor profile. Double-pot distillation takes place in stills that are replicas of the master distiller's grandfather's original design: first in stainless steel with copper components, then in a smaller, fully-copper pot still. Aged expressions rest lightly in old bourbon barrels, designed to complement rather than mask the pure agave character.
Why It Matters
Tequilera Los Alambiques earns recognition at The Sentinel Room through its commitment to single estate vintage expressions that capture the terroir of specific agave fields. Each bottling reflects not just a year's harvest, but the unique characteristics of soil, weather, and cultivation practices that shaped those particular plants. For those who appreciate the intersection of agriculture and distillation, these expressions demonstrate how place and time converge in a glass.
