Nobletons Distilling House

Nobletons Distilling House, founded by Demetrius Cain and his wife Laura, was officially established in the Fall of 2018. However, the family's distilling heritage traces back much further, with land holdings dating to 1575 and an independent distilling lineage beginning in 1824 in Missouri. Demetrius Cain, a former financial planner and bartender, was inspired to pursue his dream of creating spirits, leading him and Laura to purchase a farm in the St. Louis, Missouri area, specifically in Beaufort and Union, Franklin County. The distillery's name, "Nobletons," is derived from a family creed and toast: "for the noble character of those we keep salute."

Nobletons Distilling House is known for producing whiskey, rhum, rum, vodka, and gin. They operate as a "cane-to-glass" distillery for their rhum, managing the entire process from fermentation to bottling within the St. Louis area. For their whiskeys, they are an "estate distillery," or "ground to glass," cultivating 100% of their own heirloom grains on their farms. A distinctive aspect of their production is the use of a single, inherited family yeast strain, with roots tracing back to the 1500s. Their whiskey-making approach includes a unique 48-day fermentation process, involving 14 days of fermentation followed by 36 days of lagering, designed to develop a thick, viscous mouthfeel. They also utilize custom-built, Armagnac-style vacuum stills made from forged American copper, which allow for distillation at lower temperatures to enhance richness.

What makes Nobletons Distilling House distinctive is its deep commitment to traditional, hands-on methods and family legacy. They pride themselves on being an end-to-end distillery, controlling every step of production and avoiding shortcuts to maintain product integrity. This dedication is evident in their estate distilling practices and their unique fermentation and distillation techniques. The distillery's bottle labels feature intricate floral designs, hand-drawn by Laura Cain, symbolizing their journey and commitment. Their whiskey aging process is also multi-staged, involving 7 years in new oak, 7 years in used casks, and up to 7 more years in a neutral cask. Nobletons Distilling House is certified as an Ozark Highlands spirit, adhering to strict regional production, aging, and bottling requirements.

Notable expressions from Nobletons Distilling House include their Duckett Rum line, named after Demetrius's grandfather, which features Duckett Golden Rhum and Duckett Rhum 103. For whiskey, they produce Planters Ozark Highlands Whiskey and Copper Dome Whiskey. While the distillery does not submit its products for awards, some of their spirits have received recognition when entered by others. Whiskey Lore recognized Nobletons Distilling House as a "2025 Bronze Independent Craft Legend."
