History & Heritage
Shinjiro Torii opened Torii Shoten in Osaka on February 1, 1899, to sell imported wines. The business incorporated as Kotobukiya in 1921, and two years later Torii committed to a far riskier bet: building Japan's first malt whisky distillery. Yamazaki Distillery, constructed in 1923 at the foot of Mt. Tennozan southwest of Kyoto, was chosen for its pure water source, a detail that still defines the site's whisky today. Kotobukiya took the name Suntory in 1963, a blend of "Sun" (from the Torii family's Akadama Port Wine sun logo) and "Tory," an anglicization of the founder's surname.
The company kept expanding its whisky footprint through the twentieth century: Chita Distillery, producing grain whisky, was completed in 1972, followed by Hakushu Distillery in 1973. In 1984 Suntory acquired Morrison Bowmore Distillers, adding Scotch production to its portfolio. The largest move came in 2014, when Suntory completed a US 16 billion dollar acquisition of Beam Inc., forming Beam Suntory and making the combined company the world's third-largest spirits maker. The Whiskey
Suntory's whisky character comes from two very different mountain distilleries. Yamazaki, Japan's first malt whisky distillery, draws on water prized for its purity and uses a range of pot still shapes and sizes to build a broad flavor palette within a single site. Hakushu, built in the Southern Japanese Alps at 700 to 708 meters above sea level, is one of the highest single malt distilleries in the world and is known locally as the "mountain forest distillery." It draws exceptionally soft mountain water from the Ojira River and ferments primarily in wooden washbacks, chosen for their heat retention in Hakushu's cool climate. Hakushu also distills across a spectrum from unpeated to heavily peated malt using two different yeast strains, then matures the spirit in hogshead oak, Japanese mizunara oak, and imported sherry casks. Chita Distillery, meanwhile, is the source of Suntory's grain whisky, the backbone of its blended expressions.
The house style spans blended and single malt Japanese whisky. Hibiki Japanese Harmony represents the blended line, Suntory Whisky Kakubin is the century-old blend known for its square bottle, and Suntory Whisky Toki was built specifically for highballs. On the single malt side, Yamazaki is bottled across age statements including 12, 18, and 25 Year expressions, while Hakushu built its reputation on releases like the 18-Years-Old, which won gold at the International Spirits Challenge in 2006.
Why It Matters
Suntory's early international recognition changed how the whisky world viewed Japan as a producing country. Yamazaki 12 Year Old took the International Spirits Challenge Gold Award in 2003, and Hibiki 30 Year Old took the top award for a Japanese whisky in 2004, both moments that signaled Japanese whisky belonged in the same conversation as Scotch and American whiskey. Hakushu's high-altitude site, soft water, and wooden fermentation give it a drier, greener character than Yamazaki's, and the pairing of the two distilleries under one house is a large part of why Suntory blends carry the depth they do.

Both Yamazaki and Hakushu welcome visitors. The Yamazaki Whisky Museum is free to enter, though advance reservations are required to visit the museum without joining a guided tour; optional paid tours typically include a tasting. Hakushu Distillery offers guided tours of roughly 80 to 90 minutes that also include a tasting, and both sites provide multilingual audio guides in English, Chinese, and French. Reservations are strongly recommended, especially on weekends.
