History & Heritage

King Car Group was founded in 1979 by Lee Tien-Tsai, and for two decades whisky was not on the table, because Taiwan's alcohol production was a state monopoly. That changed in 2002, when Taiwan joined the World Trade Organization and the monopoly ended. King Car moved immediately, breaking ground on what would become Kavalan Distillery, and opened it in 2005. The first spirit ran off the stills in March 2006, and the first commercial release, Kavalan Classic Single Malt Whisky, reached the market in December 2008. Kavalan takes its name from the Kbalan, the indigenous people of the Yilan plain where the distillery stands, drawing on water from the springs of the Snow Mountain and Central Mountain ranges. Founder Lee Tien-Tsai and Chairman Yu-Ting Lee were inducted into the World Whiskies Awards Hall of Fame in 2018, formal recognition of how fast the distillery had gone from a standing start to an industry benchmark.

The Whiskey

Kavalan malts unpeated barley sourced primarily from Europe and Scotland, and ferments it with two yeast strains, one French and one South African, chosen specifically to push fruit character forward. The mashing line runs five semi-lauter mash tuns at an 8-tonne charge each, built for high-clarity wort, and fermentation happens across 40 stainless steel washbacks of 25,000 liters apiece, with 60-to-72-hour cycles under tight temperature control. Distillation runs through ten sets of Scottish-built pot stills, twenty stills total, and Kavalan is known for an unusually narrow spirit cut, the "heart of the heart," taken specifically to keep the spirit clean and complex. Maturation happens in ex-bourbon, ex-sherry, ex-port, and ex-wine casks, and the distillery's proprietary S.T.R. process, shaving, toasting, and re-charring, rejuvenates used wine barrels for a second life aging whisky. Yilan's subtropical heat and humidity accelerate maturation and drive a heavier angel's share than a Scottish warehouse ever sees, which is how a whisky this young tastes this developed. Annual capacity exceeds 10 million bottles, with more than 300,000 barrels aging at any time. The Sentinel Room's Reserve Whiskey Library carries Kavalan Ex-Bourbon Oak Single Malt Whisky, matured exclusively in ex-bourbon American white oak and built around tropical fruit, vanilla, coconut, and spice, a clean entry point into the house style.

Why It Matters

Kavalan's trophy case is the reason "Taiwanese whisky" stopped sounding like a novelty. Kavalan Solist Vinho Barrique was named World's Best Single Malt Whisky at the 2015 World Whiskies Awards, and Kavalan Solist Amontillado Sherry Single Cask Strength took World's Best Single Cask Single Malt Whisky in 2016. Kavalan Ex-Bourbon Oak Single Malt Whisky won a Double Gold Medal at the 2021 San Francisco World Spirits Competition. In 2025, Kavalan Solist Fino Sherry Single Cask Strength Single Malt Whisky was named Whisky of the Year at both the International Whisky Competition and the International Wine & Spirit Competition, while the distillery itself took Distillery of the Year at the IWC and head of R&D Zerose Yang won Master Distiller of the Year.
