James A. Miller began distilling in Bourbon County, Kentucky in the late 1830s, and in 1855 he purchased an unfinished distillery in Paris, Kentucky, completing it in 1856. His whiskey was first sold as Miller's Old Bourbon before taking the Chicken Cock name, a common term for a rooster in that era, in the early 1860s. Miller died in 1860 at age 42, and his former clerk George G. White carried the brand forward, building it into a nationally known name and defending its rooster trademark in federal court against an imitator in the 1890s.

In 1899 the brand passed to the Kentucky Distilleries and Warehouse Company. During Prohibition, Chicken Cock earned its outlaw reputation: whiskey produced in Canada, smuggled across the border in tin cans, and poured in New York speakeasies including Harlem's Cotton Club. National Distillers discontinued the label in the 1950s, and the name went quiet for more than sixty years.

In 2011, spirits entrepreneur Matti Anttila of Grain & Barrel Spirits came across the brand while researching bourbon history, including vintage bottles at the Oscar Getz Museum of Whiskey History in Bardstown. Grain & Barrel Spirits brought the label back to market in the years that followed, and in 2017 released the first Kentucky bourbon under the Chicken Cock name in over six decades.

The brand has built a reputation for finishing and barrel work. Chicken Cock Double Oak Whiskey takes seven-year Kentucky whiskey aged in used barrels and rebarrels it in new white American oak on the top floor of a Bardstown Bourbon Company rickhouse. Chicken Cock Red Stave Petite Sirah Barrel Finish rests Kentucky straight bourbon in J. Wilkes Petite Sirah wine barrels. The brand also introduced Chicken Cock Bourbon Wheated Kentucky, its first wheated mash bill, and Chicken Cock Whiskey Island Rooster Rum Barrel Rye, a rye whiskey finished in rum barrels.
