Midleton Distillery
Midleton, County Cork · international · Founded 1825
Nearly every drop of the Irish whiskey most Americans can name flows from one campus in East Cork. Midleton Distillery is where Jameson, Redbreast, Powers, the Spot range, and Midleton Very Rare are all made, under one roof, by Irish Distillers, a Pernod Ricard subsidiary as of July 2026 and the firm that carried Irish whiskey through its leanest decades and back into the light. For a category that once nearly vanished, Midleton is both the ark and the engine.
History & Heritage
The distillery at Midleton, County Cork, was established in 1825, when the Murphy brothers, James, Daniel, and Jeremiah, converted a former woollen mill into a whiskey distillery. By the 1830s, by contemporary accounts, the operation was producing roughly 400,000 proof gallons a year with a payroll of nearly 200, and it housed the largest pot still ever built, a 31,618 gallon vessel the distillery was assembled around. In the late 1860s the Murphys' firm joined with other Cork distillers to form the Cork Distilleries Company, and in 1966 that firm merged with John Jameson & Son and John Power & Son of Dublin to form Irish Distillers, consolidating what remained of the Irish whiskey industry after a half century of decline.
The consolidation reshaped Midleton itself. In July 1975, production moved from the original 1825 site into a purpose-built modern distillery next door, and the Jameson and Powers whiskeys of Dublin came to be made in Cork. In 1988 Irish Distillers was acquired by the French drinks group Pernod Ricard, whose sustained investment made Midleton the largest distillery in Ireland. The distillery marked its bicentenary in 2025, and a further chapter is already underway: a new carbon neutral distillery, announced in 2022 as a 250 million euro project, is under construction on an adjacent site, with its opening now expected in 2027.
The Whiskey
Midleton produces both pot still and grain whiskey at remarkable scale: total capacity is 64 million litres of alcohol per year, run through three 75,000 litre copper pot stills, the largest currently operating anywhere in the world, alongside three column stills and a micro-distillery. Its signature is single pot still Irish whiskey, a style unique to Ireland made from a mash of malted and unmalted barley, triple distilled, with the raw barley lending the spicy, creamy texture the category is known for.
That style is the backbone of the Midleton expressions in The Sentinel Room's Reserve Whiskey Library. Redbreast Single Pot Still 12 Year Old Irish Whiskey, Redbreast Single Pot Still Irish Whiskey 15 Year, and Redbreast 21 Year Old Irish Whiskey trace the sherry-influenced house style across its maturity range, while Redbreast Lustau Edition Irish Whiskey adds a finish in Oloroso sherry casks from Bodegas Lustau. Powers John's Lane Release 12 Year Old Irish Whiskey revives the robust pot still character of the old Dublin distillery it is named for, and Powers Three Swallow Single Pot Still Irish Whiskey offers the same tradition in a lighter register.
Why It Matters
When Irish whiskey collapsed in the twentieth century, single pot still whiskey survived in only a handful of expressions, and after 1975 nearly all of it was made at Midleton. The revival of the style was led from this one campus, so anyone who wants to understand what Irish whiskey was, and what it is becoming, ends up tasting Midleton's work. With seven expressions in the Reserve Whiskey Library, The Sentinel Room offers those who appreciate good whiskey a direct line into the house that carried the category.
