John Manson founded the distillery in 1797, and it remained under the ownership of John Manson & Company until 1884, when it was bought by J.G. Thomson & Co. of Leith. The Whiskey
Glen Garioch draws its process water from the Handy Burn and from Coutens' Silent Spring, a mineral-rich source discovered in 1972. Barley is milled on a traditional Porteus grain mill, then mashed twice daily, four tonnes at a time, in a full-Lauter stainless steel mash tun. Fermentation runs roughly 48 to 72 hours in stainless steel washbacks. The stillhouse holds one 25,000-litre wash still and two spirit stills (11,000 and 12,000 litres), though typically only the larger spirit still is in use, and the wash still was recently converted to traditional direct-fired heating, a method that adds complexity to the spirit while cutting the distillery's carbon footprint. The stills carry unusually long lyne arms, which increase copper contact and push the new-make spirit, distilled to around 72% ABV, toward a lighter, fruitier character. Since Glen Garioch reopened in 1997, the distillery has mostly used unpeated malt, a deliberate break from its historically smokier style. Maturation happens primarily in American oak ex-bourbon and European oak ex-sherry casks, and every release is non-chill filtered.
