Rockwell Vermouth Co

When winemaker Birk O'Halloran bottled his first batch of vermouth in July 2020, he wasn't just launching another spirits brand. He was staking California's claim in a category long dominated by European producers, armed with three hundred herb extract trials and a distinctly American vision.

History & Heritage

Rockwell Vermouth Co. emerged from O'Halloran's years-long quest to create an American vermouth worthy of modern cocktail culture. Based in California, the company represents a deliberate departure from traditional European methods, focusing exclusively on vermouth production rather than diversifying across multiple spirits categories. The project required extensive experimentation, with over one hundred recipe batches tested before achieving the desired profile.

The Vermouth

Rockwell's signature innovation lies in Artemisia Californica, California sagebrush that serves as their answer to traditional wormwood. This native botanical delivers considerably more aromatic complexity than its European counterpart, anchoring expressions that include Classic Sweet, Extra Dry, Native Amber, and Single Cask Sweet vermouths. The production process incorporates golden cane sugar caramelized by Carolina specialists, sun-dried California black mission figs from a family with nine decades of experience, and UC Davis-developed grape clones for the base wine.

Why It Matters

Rockwell earned its place in serious cocktail programs by proving American vermouth could match European standards while offering something genuinely different. The Extra Dry claimed a spot on Wine Enthusiast's Top 100 Spirits of 2024, validating O'Halloran's approach. For those who appreciate good whiskey, Rockwell's vermouths provide the aromatic complexity and regional character that elevate classic cocktails, whether in a Manhattan or Negroni.
