In the pantheon of Italian amari, few expressions command attention like Cynar. This artichoke-based bitter liqueur stands as a testament to post-war Italian innovation, transforming an unlikely vegetable into one of the most versatile spirits behind the bar. While not whiskey, Cynar earns its place in The Sentinel Room's Reserve Whiskey Library through its remarkable ability to elevate whiskey cocktails and serve as a bridge between American and Italian drinking traditions.

History & Heritage

Venetian entrepreneur Angelo Dalle Molle launched Cynar in 1952, during Italy's economic boom. The liqueur gained national recognition through television advertisements on 'Carosello,' featuring actor Ernesto Calindri. Since 1995, the Campari Group has produced and distributed Cynar, expanding its reach beyond Italy while maintaining the original secret recipe.

The Liqueur

Cynar's foundation rests on an infusion of 13 to 16 herbs and plants, with artichoke leaves (Cynara scolymus) providing the dominant character. Despite its vegetable base, the liqueur delivers complex notes of dark chocolate, walnut, allspice, and cola rather than overt artichoke flavor. The standard expression carries 16.5% ABV, while Cynar 70 Proof offers bolder flavors at 35% ABV.
