S3 continues as we welcome Koval Distillery to The Sentinel Room for an evening centered on process, philosophy, and the decisions that shape modern American whiskey.
Founded in Chicago by Sonat Birnecker Hart and Robert Birnecker, Koval didn’t follow the traditional path. They built their distillery around organic grains, single-barrel production, and a deliberate departure from legacy Kentucky models—creating a portfolio that challenges expectations and rewards attention.
This is not a tasting built around hype or label recognition.
